Schaerer News | Spring/Summer 2020 Committed to our customers Dear readers, In the last edition of Schaerer News, we introduced our new “We love it your way” brand image and the three symbols which stand for our core values: The heart for “flexible”, the coffee bean for “coffee expertise” and the coffee cup as a frame for the two other values and as the symbolisation of our Swiss roots. In this edition, we will show how we experience these values in practice - both in our daily business and in the development of innovations. We are in the happy situation of enjoying a wide international foundation from retail to major clients in Europe, the US and Asia. For us at Schaerer, all of our customers are important and we feel strongly about always offering them the right solution for their indi- vidual needs. Our machine technology also reflects our values, especially with the newly- developed Schaerer Coffee Soul with the “Select” concept. With the Coffee Soul, we are making the individual- isation of our fully-automated coffee machines even easier as well as accessible to customers who only need a small number of machines. With this concept, the design, perfor- mance and features can be selected independently of one another. Pur- chasers therefore only pay for what they really need. The interest of our customers, our enormous growth in 2019 and the large, exciting projects which we are currently working on all demonstrate that we satisfy a market demand. The enthusiasm of our customers, which makes us very proud, encourages us to continue down this path - because we are committed to our customers. At this juncture, I don’t want to forget the Schaerer Team, which has been embodying our strong customer focus for a very long time, faces new tasks with a positive outlook and makes the impossible possible over and over again. With the innovative, free-standing coffee shop for self-service, we offer an op- tion for practical extension of coffee operations. During development, it was important to us to achieve the greatest possible flexibility, because creating individual worlds of experi- ence plays an important role, espe- cially in this market segment. These machines are free-standing and therefore have to "speak for them- selves”. Customers can create their own style and user experience using only the machine and do not have to rely on a completely furnished, in- dividualised coffee shop and trained staff as well. Luckin Coffee, with the use of the Schaerer Premium Coffee Engine in China, has shown how individualised design based on the Schaerer Premium Coffee Corner works in practice. Schaerer Coffee Soul Just select it your way! The new Schaerer Coffee Soul ‘‘Select” serves with the highest level of customer individuality With a new conceptual approach, the Schaerer Coffee Soul ‘‘Select” unites unique design with nearly limitless configuration freedom. The machine concept is based on the underlying concept of combining technical performance and optical options independently of each other and therefore giving customers the highest level of flexibility for exact adapta- tion to their business model. The Schaerer Coffee Soul ‘‘Select”, with its clever ‘‘Select” concept, is available so customers can indi- vidually select which equipment they need - from the milk system to the type of outlet or the number of grinders to other features such as the ‘‘Hot & Cold ” technology or a syrup station. Regardless of the technical configu- ration, they can choose between the Schaerer Coffee Soul ‘‘Select” design version with 10.4- inch display and the Schaerer Coffee Soul ‘‘Select” design version with 12.1-inch display. 5

The look of the coffee machine should also fit seamlessly into the design concept of the com- pany. Schaerer Coffee Soul “Mix & Match” for maximum individuality With or without “Best FoamTM” milk system? “Hot & Cold” technology for cold coffee specialities? Amount of grinders? Automatic outlet? Once the customer has defined the technical equipment using the “Mix & Match” principle, they then select the screen size, the colour and the user guidance system which best fit their culinary concept. The design version with the 10.4 inch screen combined with the red elements and the user guidance for full-service concepts is particu- larly well-suited for use in full-ser- vice areas of restaurants or hotels. The recommended design version for the large 12.1 inch screen stands out thanks to its high-quality materials, stainless steel and decorative copper elements. This design makes it the ideal selection for operators who place the highest demands on the de- sign of their coffee machines and set them up where customers can see them and in self-service areas, for example in petrol stations, in small grocery stores or offices. Whether larger or smaller touch display: The user interface is a completely new design and the display of beverages and processes is oriented on the most common operating situations: Self-service, setting for regular and frequent users as well as a setting for operation by staff. “Thanks to the clever “Select” concept and the corresponding infrastructure in our production facilities in Zuchwil, we are also able to quickly deliver indi- vidualised machines - even in high quantities”, says Schwartze. The new Schaerer Coffee Soul “Se- lect” not only plays with the entire spectrum of possible versions and combinations and therefore offers Schaerer customers unique flexibility in the configuration of their tailored coffee machine concepts. It is also the first machine that Schaerer has developed entirely in line with the new brand positioning “We love it your way”, and it shows the direction in which the product range will be developed in the future. Schaerer Barista Combining the craftsmanship and aesthetics of a portafilter machine with the simple operation and process reliability of a ful- ly-automated coffee machine - the Schaerer Barista has been living up to this standard since it was launched. From coffee bars to Italian restaurants, the machine is helping restaurant owners create the perfect envi- ronment for coffee culture, both visually and technically, while also providing con- sistent quality. In order to better unite customised requirements and efficiency, the Schaerer Barista is being supplemented to include extension and adaptation options. While the grinding level and brewing time are automatically monitored and inde- pendently readjusted as needed, the second optional Supersteam quickly prepares milk foam creations of consistent quality with its fully-automated technology. The new exter- nal bean hoppers are of particular interest to locations with a high beverage output. A capacity of over one kilogram per hop- per ensures consistent operation without constant refilling, even with a high volume of guests. Various external parts can be wrapped in colourful foil for even better harmony of the machine appearance with the existing furnishing concepts. Software intelligence for high beverage quality If a coffee machine is often in use, regular readjustment of the grind- ers will ensure a consistent flavour profile and therefore high espresso quality. In order to minimise service processes and guarantee the flavour experience which comes as a matter of course for Schaerer machines, the Schaerer Barista will feature auto- matic grinding adjustment and brew- ing time monitoring. Together with an intelligent software solution, the grinding level and brewing time are constantly monitored and automati- cally adjusted if there are deviations from the defined standard in order to deliver optimal results. 9
Schaerer News | Spring/Summer 2020 Perfect milk foam at the press of a button Milk foam is essential for many espresso specialities. However, a great deal of know-how and practice is needed to achieve high quality with a traditional steam wand. The standard Schaerer Barista features a Supersteam system for fully-auto- mated preparation of milk foam in up to three different consistencies. For areas with high beverage output, it can now be equipped with a second Supersteam as an option. Properties such as temperature and consistency are stored in the system and are au- tomatically implemented after selec- tion. This means even inexperienced employees can make perfect milk foam and also use the time saved for other service work. From coffee bars to Italian restaurants, the machine is helping res- taurant owners to create the perfect environment for coffee culture, both visually and technically, while also providing con- sistent quality. 10 Extra portion of beans Exceptional colour accents It’s not only milk foam which pushes coffee machines to their limits; bean hoppers must also be refilled often if the output is high. For the Schaerer Barista, there is the option of selec- ting bean hoppers which are at- tached to the machine. A capacity of up to 1,100 grams each guarantees that large amounts of coffee can be prepared without constantly having to refill the hoppers with beans. How- ever, the movable cup storage area and the cup heater have to be re- moved due to the large hoppers. The Schaerer Barista is much more than an espresso machine. When put in the right setting, it really grabs the customer’s attention in any café or restaurant. There is now the option of attaching foil to different parts of the machine to better utilise this potential for restaurant owners. The side parts, rear wall and trim can be designed with special foils in any im- aginable colour - there are no limits on creativity. Each order is made and processed separately so customers receive machines which completely fulfil their expectations in the short- est possible time.

High output, best quality Since the goal was to provide cof- fee quality which no other Premier League stadium can offer, the deci- sion to select the Schaerer Coffee Art was quickly made. With the venerable White Hart Lane having been torn down, Tottenham Hotspur FC has been playing home games in the new, cutting-edge Tottenham Hotspur Stadium since April 2019. It was equipped with high-quality state-of-the-art techno- logy in all areas - including the coffee machines. The North London club is first in the Premier League to com- pletely do away with instant coffee and is changing its entire menu to fresh coffee. On every match day these are now supplying thousands of fans with delicious coffee using blends from roaster Tiki Tonga. Everything fresh instead of instant While instant coffee and milk powder are still the standard in most Brit- ish football stadiums, Tottenham is strictly using fresh products. Fans who would rather have a cappuccino or espresso in place of the classic stadium beer, can now enjoy top quality cups of their favourite coffee beverage. The Schaerer Coffee Art machines prepare a wide range of coffee specialities, using carefully selected beans and fresh milk, at the push of a button. The club has purchased all 53 fully automatic cof- fee machines from British company Caffeine Limited, which sells Schaerer machines in Great Britain. The con- tact between Tottenham Hotspur and Caffeine Limited was based on the company’s excellent reputation in the market. Earlier successful collabo- rations between the company and the architects of the stadium were the final clincher of working together. 13

It is therefore even more astounding that Schaerer AG’s currently largest Asian custom- er first became aware of Schaerer fully automatic coffee machines in Canada. After Charles Zhengyao Lu, chairman of Luckin Coffee, saw a fully automatic coffee machine in use at the site of a Canadian Schaerer customer, he learned more about the manufacturer from Zuchwil in Switzerland in his home country. His interest was piqued, and the first 400 Schaerer Coffee Art test ma- chines with the Supersteam steam wand for fully automatic milk foam- ing were quickly purchased in mid- 2017, with other orders for a total of 4,500 Coffee Art machines, equipped with the patented Best Foam milk system and the Twin Choco powder system, following in December 2017 and April 2018. In 2019, the succes- sive switch to the Schaerer Coffee Soul started, whereby the extensive options for digital integration and bi-directionality were particularly attractive for Luckin Coffee. The collaboration with Luckin Coffee was already very interesting for Schaerer by the point but then 14
Luckin Coffee began a veritable rollercoaster ride. Because despite many years of experience in the Asian market, Philipp Köppel, Area Sales Manager of Indo-China & North East Asia of the Professional Coffee Machines Global Business Unit, was surprised by the tempo of the Chinese custom- ers: “There are usually three high speeds: Fast, really fast, light speed - and then there’s Luckin Coffee”, says Köppel about his observations of the collaboration. “We at Schaerer showed maximum flexibility and absolute customer focus to satisfy the require- ments. The outstanding achievement with Luckin Coffee is absolutely a team success”. The start for the Coffee Soul was com- parably cautious with 20 test machines in China. But when, at the beginning of 2019, Luckin Coffee announced that it would open 2,500 coffee stores during the year, Schaerer prepared for further growth. In mid-2019, this growth became reality as the order for 2,000 Schaerer Coffee Soul machines was received, and the new machine was installed step-by-step in Luckin Coffee’s stores in China. e e f f o c i n k c u l : s o t o h P 15
Schaerer News | Spring/Summer 2020 “We had the chance to get to know a customer who managed to open a new store every four hours in 2019.“ But Luckin would not be Luckin if this was the only activity of the currently largest coffee chain by number of stores in China. In the first week of July 2019, Schaerer was informed that in addition to the existing coffee shops, Luckin would open tea shops, in which primarily the bubble tea so popular in Asia would be sold. To do so, the custom- er needed a machine that delivers similar Schaerer quality and meet the requirment of tea shops. In this context, Schaerer once again showed its capabilities in customer-specific projects and developed a special version of the Coffee Soul machine tailored exactly to the needs of Luckin Coffee. The timeframe was tight, but Schaerer managed to deliver a total of 2,000 machines to Luckin by the end of 2019. “The collaboration was extremely exciting and challenging for us. After certain initial difficul- ties, we completely won over Luckin Coffee with our speed and skills when it comes to customer-specific solutions”, concludes Philipp Köppel. “We had the chance to get to know a customer who managed to open a new store every four hours in 2019, which is unprecedented and unbe- lievably dynamic”. 16 Luckin Coffee uses the Schaerer Premium Coffee Engine for its new smart unmanned retail strategy 2020 will continue to be exciting for Schaerer. At the beginning of the year, Luckin Coffee introduced its smart unmanned retail to bring Luckin closer to customers. A central com- ponent of this smart unmanned retail strategy is the Schaerer Premium Coffee Engine (SPCE). The central el- ement of the intelligent “luckin coffee EXPRESS” coffee machine ensures that Luckin customers can enjoy high-quality coffee anytime anywhere. The prerequisite for entering the unmanned retail segment was the very good and simple integration of the Schaerer machines into Luckin Coffee’s digital system. Thanks to the API interface, which was developed specifically for the machine software platform of Schaerer Coffee Soul and Schaerer Premium Coffee Corner, it is possible for customers to integrate the machines into their own systems. This means that consumers can buy their coffee specialities easily and comfortably through the Luckin Cof- fee app. This technological foundation supported Luckin Coffee to plan and implement its new concept with the Schaerer SPCE. “Then came the advancement of our “Porsche” into a Luckin “Formula 1 vehicle”. The peripheral conception and implemen- tation were done together with our partner Jetinno in China”, describes Jörg Schwartze, Schaerer CEO, of the joint operation. With the “luckin coffee EXPRESS”, the coffee expertise of Schaerer is united with the unique business model of Luckin Coffee in the field of coffee vending machines. The state- of-the-art software and hardware solutions, such as IoT (Internet of Things) or big data analysis, make it possible for the Chinese market lead- er to even better meet the needs and requirements of its customers. With the “luckin coffee EXPRESS” coffee machine and the “luckin popMINI” vending machine, a higher degree of customer focus should also be achieved in the unmanned retail sector in the future.

Schaerer News | Spring/Summer 2020 A history of coffee and passion Limited edition notebook with illustrated cover Since 1924, Schaerer has produced coffee machines; coffee expertise is part of the Schaerer DNA. How- ever, knowledge alone is not the only foundation of our development; passion for good coffee is also an in- tegral component. In order to share this enthusiasm with our customers, Schaerer has created a notebook with a very special look. It is limited to 500 copies. Swiss artist Paula Troxler, born in Willisau, was hired to design the cover. It goes without say- ing that the subject was the pleasure of coffee consumption. The self-employed illustrator lives and works in Zurich and illustrates for various newspapers and maga- zines in Switzerland and abroad, as well as for posters for theatre and cultural events, festivals, CD covers and much more. The illustration on the front and back page of the “Coffee Compe- tence Centre” notebook tells a sen- sory story about coffee. There is so much to discover: The harvest, the bean, the taste, the processing, the plant. “With its fragrance, the coffee bean spreads passion throughout the world. It weaves a story of personal history and feelings and leads you to the landscape where it thrives. The illustration combines paradise and the exotic world with the enjoyment of coffee”, is how Paula Troxler describes her inspira- tion for the design. We are raffling off ten copies of the notebook! Schaerer News | Spring/Summer 2020 Swiss Coffee Festival Passion for coffee pulls a young, hip crowd to the Swiss Coffee Festival. On February 8 and 9 2020, the second Swiss Coffee Festival, organised by the Speciality Coffee Association Switzerland (SCA), took place in Oerlikon near Zurich. The festival aims to expose coffee lovers to coffee speci- alities. This year, Schaerer was represented at the event for the first time as a spon- sor of the SCA with its own booth and the Schaerer Barista. 20 The festival is a meeting place for a wide range of visitors, from ambi- tious private coffee lovers to water filter manufacturers to roasters as well as producers of portafilters and fully-automated coffee machines. A highlight of the festival was the Swiss Coffee Championships, in which the best representatives were selected in four disciplines. Awards were given in the following categories: Barista, Brewer’s Cup, Latte Art and Coffee In Good Spirits. In addition, so-called Coffee Talks were given on both days and lectures were held by very differ- ent specialists and industry experts. It all had to do with coffee - from green coffee to general coffee opera- tions to case studies from restaura- teurs as well as the pros and cons of different ways of preparing coffee. Monika Oeggerli, Trainer at Schaerer’s own training and cof- fee expertise centre, attended the festival in her role as board member of the SCA. She was responsible for the organisation and moderation of the Coffee Talks. For Schaerer AG, she used her sensory expertise to approve the quality of the bev- erages from the Schaerer Barista three-quarter-automated machine. According to Oeggerli, the event was a very enriching experience for both the SCA and Schaerer AG. An additional presentation of a Schaerer fully-automated machine is rec- ommended for next year. According to the trainer, in addition to manu- al brewing methods such as filter coffee, ibrik, AeroPress, etc., portafil- ters, semi- and fully-automated cof- fee machines are all part of the SCA family. Coffee specialities can also be brewed into delicacies on Schaerer fully-automated coffee machines and would be ideal additions to the offer- ing at the Swiss Coffee Festival. Not only Monika Oeggerli had a full schedule with the Coffee Talk pres- entations once an hour; in general, the second Swiss Coffee Festival was very well attended on both days – on Sunday morning, visitors even stood in line to get into the exhibition hall. Jürg Balsiger, Regional Sales Head in Switzerland, and Jelena Bozic, Mar- keting Manager in Switzerland, held down the fort at the Schaerer booth. "It was my first Swiss Coffee Festival and I was surprised by the relaxed atmosphere and how many of the visitors were quite young, between 20 and 25 years old”, reports Jelena Bozic of her experience. “It was not a typical trade fair. It was really interactive and there were things to try and enjoy all over the place. I had the feeling there were a lot of private visitors with passion for coffee
looking for something special”, she described of her impressions of the Swiss Coffee Festival. But the Swiss trade press was also present at the event in Zurich, as were represent- atives of well-known Swiss coffee organisations, who took the oppor- tunity to discover innovations and to exchange information with other industry insiders. For Schaerer, participating in the event was not only exciting, but also a complete success. “We had the chance to take in the coffee scene ambience and also position ourselves as manufacturers at the same time", said Jürg Balsiger after the festival. Because for Schaerer AG, the best result in the cup and individualised solutions for their customers are paramount when developing new machines. For the marketing employee, the trade fair appearance was worthwhile, and not only for networking reasons: “Although I was not exactly expecting it in that environment, I had a hand- ful of conversations with potential customers”. About the SCA The Specialty Coffee Association of America was founded in 1982 and is a non-profit, member-based organisation for the coffee speciality industry. In January 2017, the Specialty Coffee Association of America and the Specialty Coffee Association of Europe fused into the Specialty Coffee Association, or simply the SCA. The SCA Switzerland is a national branch of the SCA which holds its own events, like the Swiss Coffee Festival, and also participates in joint events, such as the annual World of Coffee trade fair. The SCA has thousands of members in over 100 countries. These include coffee growers, producers, machine manufacturers, organisations as well as baristas and roasters - the membership encompasses all elements of the coffee value-added chain. The philosophy of the SCA is based on openness, inclusiveness and the power of shared knowledge. As opin- ion leaders, the SCA members create a centre of knowledge of coffee through media and events. They define the criteria for qualitatively supe- rior coffee based on collaboration and exchange with SCAE members as well as other national and international associations. The SCA is contin- uously working to make coffee better and to raise worldwide standards in the industry. The services of the association includes set-up, execution and support for events, seminars and courses which serve to promote conscious coffee consumption and quality as well as the certification of experts and national and international competitions with awards. When creating coffee recipes, there are almost no limits to the imagination, and ingredients and flavours can be combined to fit anyone’s taste. Various equipment versions of the Schaerer coffee ma- chines, such as the ‘‘Hot & Cold” technology for hot and cold coffee specialities, are espe- cially helpful here. Boutique hotel Sans Souci in Vienna In the centre of the Viennese museum quarter, a jewel of hospitality with incomparable charm awaits visitors to the Austrian capital: In 2012, the 5-star boutique hotel Sans Souci in Vienna opened its doors. Together with London architecture firm YOO, owner Norbert Winkelmayer, hotel director Andrea Fuchs and her team have created a refuge which de- livers what it promises: ‘‘No worries”: Whoever checks in here leaves everyday life behind and is immersed in a world without worries. As soon as you enter the lobby, you can feel what Andrea Fuchs means when she is talking about the “magic mo- ments” the Sans Souci team creates for its guests: Only a few steps away from the hustle and bustle of the busy “Burggasse", the circular layout of the reception area surrounds you. The carefully selected furnishings, ele- gant flower decorations as well as a subtle note of per- fume stimulate the senses, making guests feel comfort- able. This first impression is consistent throughout the entire hotel. Every small detail is perfect; an “oasis full of charm, enjoyment and lifestyle” is how the hotel direc- tor describes the hotel’s identity. Behind the structured turn-of-the-century façade, the Sans Souci surprises with a skilful mix of antiquity and contemporary designer furniture. As an homage to the museum quarter, but also because the owner and the hotel director are huge art lovers, modern art covers the walls - the same goes for the spacious hotel rooms which shower the guest with all amenities of a 5-star hotel. Magical moments of enjoyment The “all-round feeling of well-being” of the Sans Souci is underlined by the high quality of the services and cater- ing. Whether in the spa with two saunas and the longest hotel pool in Vienna, the meeting rooms with a view of the city, the “Veranda” gourmet restaurant specialising in Austrian cuisine or “Le Bar”, which also offers private champagne tastings - all over the building, the “magic moments” promised earlier await. When it comes to catering, the Sans Souci follows a clear strategy: “When it comes to the food we prepare in-house, it is important for us to buy as much as possible from family operations in Austria and our neighbouring countries, and we also strive to buy organic whenever we can”, asserts Andrea Fuchs. This starts with the mineral water, and continues with the use of organic milk and eggs and the purchase of meat and vegetables directly from regional farmers. “For our coffee, we chose an organic and fair trade-cer- tified blend from the small “Alt Wien” Viennese roaster”, reports Andrea Fuchs. The pleasure of a 5-star cup of coffee To offer guests added comfort and to highlight the high service standards of the Sans Souci, all coffee specialities are prepared by the service employees in line with the guest’s wishes. During the hotel breakfast service, this ensures a very calm and relaxed atmosphere; and this is also an advantage when it comes to coffee service in the rooms, according to the hotel director: “It is not in line with our philosophy to provide capsule coffee machines and portioned coffee creamer in the rooms. This satisfies neither our standards for the quality of coffee nor our sustainability concept”. For this reason, the customer simply has to make a call and the requested coffee speci- ality is brought to the room free of charge. This prevents unnecessary waste and, for milk-based coffee beverages, fresh organic milk or vegan milk alternatives are used, as it's the case in the rest of the hotel. One for all Whether for breakfast service, restaurants, bars or hotel rooms: All coffee specialities are prepared by a Schaerer coffee machine which is kept in the kitchen area between the restaurant and bar. “We first had a double portafilter. But when it was in use, we realised that, during the peak times at breakfast - around 150 cups are served in one to two hours - we were simply too slow and could not offer uniformly high quality. That is why we chose a fully-au- tomated Schaerer coffee machine together with our coffee machine partner Helmut Wiegisser from BOHNUN after a few months”, remembers Andrea Fuchs. About two years ago, this model replaced its predecessor and now prepares around 55,000 coffee beverages a year. Mugs and co. Due to the many guests from the US and Germany, at the Sans Souci, mug-sized coffee beverages are most often ordered at breakfast. “Our guests from Great Britain, on the other hand, first prefer a tea and then often order an espresso. With the Schaerer fully-automated machines, we can serve these different coffee styles without a problem. In addition, we decided on the best milk system from Schaerer so we could ensure high-quality milk foam, for example for the ever-popular cappuccino. This is our third most popular coffee speciality and is served with a milk foam tower which our guests really enjoy”, says Fuchs. And to satisfy the growing demand for vegan alternatives such as almond or soy milk, the fully-au- tomated coffee machine is equipped with an additional steam wand for manual foaming. “At the moment, we are considering expanding our menu to include filter coffee, as it is becoming more popular”. In order to get on board with this trend while keeping with Sans Souci standards, the hotel director is currently looking for a charming way to serve this type of coffee and could image using a small filter coffee mug which is poured by hand at the guest’s table. About Andrea Fuchs For 30 years, Andrea Fuchs has been a self-employed company consultant in the hotel business and has signed a manage- ment agreement with the Sans Souci. The well-travelled manager is always looking for ideas which connect the people in the hotel. With this in mind, she published the book "Imagine Human Rights” together with Manfred Nowak. Illustrated by works from international artists including Yoko Ono, Catherine Opie, Edmund de Waal and Joseph Kosuth, is contains the 30 articles of the Universal Declaration of Human Rights in the UN languages of Arabic, Chinese, English, French, Russian and Spanish. “It would be great if these rights were reality for all humans - regardless of their religion, origin or skin colour”, says Andrea Fuchs. Her dream: That this book someday finds its way into the rooms of international hotels. 26

Schaerer News | Spring/Summer 2020 Four decades of progress Martin Heger looks back on a remarkable career at Schaerer From a medium-sized company operating primarily in Switzerland to a global player in the professional coffee machine marketplace – that's essentially a summary of the history of Schaerer in one sentence. One person who accompanied the firm on this successful path for almost 40 years, is Martin Heger. Martin's career also followed a continuous upward progression, in parallel with Schaerer's development. He began on this path in 1980 as a service technician in the Bernese Oberland, and after various positions in the company, ul- timately worked in Global Account Management. Martin has been enjoying his well-earned retirement since January 2020. This is an appropriate occasion to take a look back at his time at Schaerer. Challenges and fun times at work When Martin started his job as a service technician on August 1, 1980, Schaerer looked much different than it does today. With around 100 employ- ees, the company was not only much smaller, but the core business was also different. A significant share of the turnover was earned from medical technology; coffee machines made up only a third. When it was founded in the year 1892, Schaerer AG initially developed medical technology and sterilisation equipment. Operating tables were later added to the product range. In 1924, the first steam-operat- ed coffee machine followed. confronted with challenges that are hard to imagine today. Martin was responsible for supporting numerous mountain restaurants in the Bernese Oberland, where all that was avail- able was basic machinery and a few tools to solve a very diverse range of technical problems. Getting to the often remote work sites was no easy task. Road and cable railway infrastructures were not as extensive as today, and in winter, customers could often only reach the site on skis. Martin recalls that this was also quite a lot of fun. The willingness to innovate In Martin’s early years at the compa- ny in the 80s, the technicians were Over the years, Martin assumed var- ious positions of responsibility where he actively shaped the development of Schaerer. As a Customer Service Manager in Switzerland, he arranged for car phones to be installed in the service technicians’ vehicles, for example. This meant that they could be contacted at any time – and that’s been the case now since 1985. The use of the latest communica- tions technology was top priority for Martin right from the start. Use of the Internet was therefore a decisive event for him in the service arena. Where people were previously forced to work with a landline and fax, which was not very convenient, today there is a wide range of digital solutions available. Still, he looks back to an- alogue times with fondness: “Today everything is more structured and more efficient, but work used to be more people-focused”. 28
Four decades of progress technical equipment and in sales, he has proven that he is bold enough to forge new paths. As a result, for four decades he was a driving force for in- novation, and played a significant role in Schaerer’s progress in becoming an international corporation. The company will continue to benefit from this in the future, and is extremely grateful for the many and varied services he provided. International success, professionally and pri- vately A career packed with highlights followed his move to the export de- partment. Here, Martin was directly involved in establishing sales struc- tures in various countries, including Schaerer GmbH in Germany. The first orders from Asia were received during this period, forming the foundation for the current success in this market. A special highlight was the collaboration with Costa Express, which is part of the UK’s largest coffee shop chain Costa Coffee. Following the initial contact in 2007, Schaerer received orders for several hundred machines soon afterwards. Specially customised coffee machine technology was developed together with Costa Express as part of this project. To Martin, it is clear that the good relationship with Costa Express is a cornerstone for today's interna- tional success. Establishing a sales network in Iceland was not only a profession- al success for Martin, but also an enriching experience on a personal level. Around 15 years ago, he sup- plied a customer on the island way up North with Schaerer machines for the first time, and since then he has had a very special relationship with the Scandinavian country. In the meantime, Schaerer has become the clear market leader in Iceland in the field of professional coffee machines, and has not least kitted out the restaurant in the famous “Blue Lagoon Spa”. Martin visited the island at least once a year during this time, and established friendships with contacts there, where they spent time together mountain climbing, fishing and whale watching. “I fell in love with the country”, he says in summary, and added: “You have to remain open-minded. I have always enjoyed immersing myself in other cultures”. Whether as a technician, customer service manager or in global account management: Ongoing personal development has always been im- portant to Martin. Both in terms of 29

The requirements on the performance of professional coffee machines as well as on the flexibility and custom- er focus of manufacturers are growing. Any company which wants to be on the forefront or even move forward at all must offer concepts which impress customers all across the board. Schaerer seems to be doing everything right here, as company development has shown only one trajectory in the last few years: upwards. Drivers for expansion are in the US and Asia, but in the domestic Swiss market as well as in Germany and Austria, Schaerer is also showing very positive company development. 30

Since 2019, as Director of Sales and Ser- vice, he has also been re- sponsible for Schaerer AG Schweiz. He talked to us about the DACH market. Mr Marti, how has Schaerer’s business developed in Germany and Austria in the last few years? In the last few years, we were able to steadily expand our market share in the professional coffee machine sector - from the hotel and restaurant business to office coffee service. In my opinion, success stands on two col- umns: Column one is the triad of cof- fee expertise, powerful technology and consistent orientation on customer and market demands. Column two is our strong dealer network. In contrast to in Switzerland, we do not directly sell our coffee machines in Germany and Austria, but in close connection with around 120 partners. Their com- mitment and the good collaboration make a decisive contribution to the success of the Schaerer brand. 31
Schaerer News | Spring/Summer 2020 Headquarters in Zuchwil (Solothurn) Our service professionals in Switzerland Since this spring, Schaerer Deutschland GmbH, together with its partner network, has been selling filter coffee machines from the Curtis brand in Germany and Aus- tria. How did this come about? Wilbur Curtis is the second-largest American producer of professional coffee machines and, in addition to WMF and Schaerer, has been the third brand in the Professional Coffee Machines division of Groupe SEB since 2019. In filter coffee machines in particular, we see a valuable addi- tion to the Schaerer machine portfolio which allows us and our partners to offer customers even more compre- hensive concepts and to open up new market potentials. The first promising feedback at the spring trade fairs confirmed that we are on the right path. The filter machine portfolio, such as the Curtis G4 GemX Gemini, offers clever concepts for the reliable preparation of large amounts of filter coffee with high quality and variety. 32

How is it set up? One the one hand, we as a Swiss company profit from the demand in our home market for products manu- factured in Switzerland. On the other hand, we are in a field with strong competitors. To score points here, we must not only impress with our coffee machine technologies, but also with an extensive range of services. To be closer to our customers and reach them more quickly, we have restruc- tured the sales areas and also hired some new staff here, for example. We have also arranged our service pack- ages to even better satisfy different customer requirements. Another advantage for Swiss customers: As a globally active company, we use the experiences gained from the inter- national arena for the development of concepts for our home market, for example in the fields of vending or office coffee service - topics which are becoming more important here as well. 33 How do you support your partners in Germany and Austria? We have the same goal in both countries: We see ourselves as a partner on equal footing who offers a comprehensive package of services, thereby supporting dealers in a ho- listic manner - from coffee machine technology to tech support to coffee trainings. In order to keep up with our service standards in all areas, we have, for example, hired staff for our key account and tech support teams and decentralised them. This makes it possible for us to work even more closely with partners and even better support them with the introduction of new products, such as the new Schaerer Soul “Select”, the Curtis filter coffee machine portfolio or when implementing digital Schaerer Coffee Link solutions.

But why a blog? There are many good reasons for this. On the one hand, Schaerer is underlining its “Swiss coffee competence” and discussing trends as well as different preferen- ces, such as how coffee is drunk all over the world. On the other hand, this type of website platform can cre- ate clear benefits: If interested users regularly visit the page to follow the newest blog articles, the relevance of the page grows. This, in turn, has a positive effect on the results in the search engines (such as Google, Bing and Yahoo). Blogs are an important component for acquiring new cus- tomers with marketing - the potential customer should find the company, not the other way around. That does not mean that a company website without a blog wouldn’t work. All tested models withstood these at- tacks without a problem. The applied safety measures therefore fulfilled the highest standards. Thanks to the successful certifi- cation as a “Protected Privacy IoT Product”, Schaerer is becoming a forerunner amongst manufacturers of professional coffee machines. The four certified models are amongst the first coffee machines whose high data privacy standards have been confirmed with the quality seal of TÜV Rheinland. For the responsible team headed by Nils Pimpl, Special- ist of Information Security for WMF Group GmbH, which accompanied and implemented the certification for WMF and Schaerer coffee machines, this means that the company was on the right path in the past years and did good work. Beneficial for the success was the close collaboration between Nils Pimpl and Schaerer employee Sebastian Walk, who, as For years, digitalisation and network- ing have been decisive topics in the area of professional coffee machines - and Schaerer is no exception here. That is why various Schaerer machines are integrated into the Schaerer Coffee Link digital platform. This is an intelligent telemetry solu- tion which efficiently collects various usage data and can evaluate it for targeted process optimisation. That data privacy and information security have the highest priority is now con- firmed by TÜV Rheinland as well with the “Protected Privacy IoT Product” certification for the Schaerer Coffee Art, Schaerer Coffee Prime, Schaerer Coffee Soul and Schaerer Premium Coffee Corner models. Successful certification took about a year. After all necessary documents were provided and checked by TÜV Rheinland, an extensive inspection of the Zuchwil factory was the next step. “During the entire IoT development and processing procedures, compli- ance with information security and data privacy regulations was strongly emphasised. Finally, the machines had to withstand a so-called pene- tration test, for which IT specialists tried to compromise the devices via their telemetry interfaces”, explains 36
